Notes / Gotchas

Tip

Revenue per establishment by type is the most useful figure: a target of HKD 5-8M/year is typical for an independent restaurant in Sheung Wan. Use this to sense-check regression model output.

Caution

The survey uses a sample methodology — smaller restaurants are underrepresented. Actual sector revenue is likely 10-20% higher than reported.

• Data is HK-wide aggregate, not by district — apply local uplift factors for premium areas like C&W
• Annual lag means 2024 analysis uses 2022 data — adjust for CPI inflation
• “Receipts” = gross revenue including tips and service charge; “Purchases” ≈ COGS including food, beverages, packaging
